Coconut cookies and biscuits sound like a crunchy and crispy cookie made with dry coconut and wheat flour. This ideal savoury and sweet evening snack can be made with ingredients available at everybody's kitchen. The recipe is easy and simple and can be enjoyed with a cup of hot tea.
Though the making of cookies has been imported from overseas, cookies recipe is not new to Indian cuisine. You can make cookies with many flavours. One of the most popular cookie recipes is coconut cookies and biscuits. Coconut cookies may be eggless or may be made of egg yolks. Egg yolks make cookies moist, creamy, and help to remain in shape. However, by adding the baking soda and baking powder instead of egg yolk, you can achieve the same.
Notes: In this recipe, wheat flour has been used instead of plain maida. While plain maida enhances taste, wheat flour is healthy. You may use an old pressure cooker and if you use a traditional oven, bake it at 180 degrees for 15 minutes. In this recipe, desiccated coconut is a must, and never use freshly grated coconut here.

110 gm softened butter (1/2 cup)
160 gm wheat flour (1 cup)
110 gm sugar (1/2 cup)
¼ baking soda
½ teaspoon baking powder
Desiccated coconut (1 cup)
Vanilla extract (1 teaspoon)
Milk (3 tablespoons)
Coconut Cookies Recipe
Step 1. Take ½ cup sugar and ½ cup softened butter in a large mixing bowl.
Step 2. Mix them well until the mixture turns creamy.
Step 3. Add 1 cup of wheat flour or maida to the batter placing a sieve on the bowl.
Step 4. Mix ½ teaspoon baking powder, ¼ th teaspoon baking soda, and ¼ teaspoon salt to the wheat flour.
Step 5. Now, filter the flour so that there are no lumps.
Step 6. Add desiccated coconut to the mixture. You may take 1 cup or lesser than 1 cup as per your taste.
Step 7. Combine the wheat flour with butter mixture.
Step 8. Now add 1 tsp vanilla extract and 3 tbsp milk.
Step 9. Again, beat and combine the mixture so that it mixes well.
Step 10. Make the dough, cover it, and refrigerate it for 30 minutes.
Step 11. Take the pressure cooker, add 1 ½ salt, and place a cooker rack. Then keep a plate above it.
Step 12. Close the lid without placing the whistle and gasket. Heat for 5 minutes.
Step 13. On the other hand, cut small ball-sized dough from the main dough and flatten them.
Step 14. Keep the cookie dough over the plate maintaining good space in between.
Step 15. Close the lid and cook for 15 minutes.
Step 16. When it is hot, cookies are soft. After cooling, cookies turn crispy.
